Quino Stuffed Mushrooms

Ingredients:
  1. 15 mushrooms (washed, de-stemmed, and scraped)
  2. ½ cup quinoa (washed and cooked)
  3. ¼ cup chopped walnuts
  4. ¼ teaspoon thyme
  5. 1 plum tomato, diced
  6. ½ tablespoon grapeseed oil
  7. 2 tablespoon avocado oil
  8. Sea salt
Directions:

1. Preheat the oven to 350 degrees.
2. Brush mushrooms with avocado oil, place them on a baking sheet and set them aside.
3. In a bowl mix the quinoa, thyme, tomato, grapeseed oil, walnuts, and a dash of sea salt.
4. Fill the mushrooms with the quinoa stuffing and bake at 350 degrees for 25 minutes.
5. Enjoy!
